The BEST Paleo Pancakes

As a professional athlete, it’s imperative that I consume nutrition that helps to fuel my performance. I’m always looking for the best protein, fats, and carbohydrates to help me improve. Eating does not have to be burdensome, eating whole foods close to their natural state will help you feel, look and perform better.

Below Briana and I share our favorite Paleo Pancake recipe. Now you can still eat delicious food that is healthy, the next time your breakfast sweet tooth starts to crave! I always have a couple of over medium eggs and bacon with my pancakes, Bri usually just enjoys the pancakes.

This is a super simple and quick recipe that should only take about 15 minutes from start to finish! Let us get right into it. Here is what you’ll need!

Ingredients:

  • 2 Eggs

  • 1/4 Cup of Applesauce (We typically process a red delicious apple for ours)

  • 1/2 teaspoon of vanilla extract

  • 1/2 cup almond flour

  • 1/2 cup tapioca flour

  • 1 teaspoon baking powder

  • Pinch of sea salt

  • 1/3 cup of add-ins (Blueberries are our go-to, you could use chocolate chips, bananas, etc.)

How to prepare and cook the most delicious paleo pancakes you’ve ever had.

Instructions:

  1. Whisk together the wet ingredients including the eggs, applesauce, and vanilla extract in a medium-sized mixing bowl.

  2. Add all dry ingredients, while mixing with a whisk (Almond flour, tapioca flour, baking powder, and salt)

  3. Heat butter or oil (coconut or avocado) on a skillet or non-stick pan over medium heat. Add 1/3 cup batter (should yield around 6 pancakes) and add in your blueberries or chocolate chips.

  4. Wait around 3 minutes, which should make the pancakes golden brown, then flip and continue to cook for about 2 minutes until the pancakes are ready to feast on!

  5. Finish using the rest of the batter and feast on the most delicious paleo pancakes you’ve ever had.
